01 - 16 large Medjool dates, pitted
02 - 4 ounces fresh goat cheese (chèvre)
03 - 8 slices thin-cut bacon, halved crosswise

# Directions:

01 - Set oven to 400°F and line a baking sheet with parchment paper.
02 - Using a small knife, make a lengthwise slit in each date and remove the pit if necessary.
03 - Spoon about 1 teaspoon of goat cheese into each date and press gently to enclose the filling.
04 - Encase each stuffed date with half a slice of bacon, securing ends underneath or with a toothpick if needed.
05 - Place wrapped dates seam-side down on the prepared baking sheet.
06 - Cook for 18 to 22 minutes, turning once halfway through, until bacon is crisp and browned.
07 - Allow to rest for 5 minutes before serving.
