01 - 8 medium flour tortillas
02 - 1.5 cups canned black or pinto beans, drained and rinsed
03 - 2 cups shredded cheddar, Monterey Jack, or blend cheese
04 - 2 tablespoons butter or neutral oil

# Directions:

01 - Lightly mash the drained and rinsed beans with a fork to facilitate spreading, if desired.
02 - Place a large skillet over medium heat and add butter or oil to coat the surface.
03 - Position a tortilla in the skillet, then evenly scatter 1/4 cup shredded cheese over half of it, followed by approximately 3 tablespoons of the mashed beans.
04 - Fold the tortilla in half to enclose the filling completely.
05 - Cook for 2 to 3 minutes per side, gently pressing with a spatula, until the tortilla is golden and the cheese has melted.
06 - Remove the cooked quesadilla and repeat assembly and cooking with remaining tortillas, cheese, and beans.
07 - Cut each quesadilla into wedges and serve immediately with preferred toppings such as salsa, sour cream, avocado, or cilantro.
