# Expert Tips:

01 -
  • The marinade is so simple but it transforms ordinary chicken into something that tastes like vacation.
  • Tzatziki made from scratch takes five minutes and tastes a thousand times better than store-bought.
  • Everything can be prepped ahead, so dinner comes together in minutes when youre starving.
  • Its messy, hands-on, and fun to eat, which makes it feel like a treat even on a Tuesday.
02 -
  • If you skip draining the cucumber, your tzatziki will be thin and watery and it will soak through the pita before you finish assembling.
  • Marinating the chicken for at least an hour makes a huge difference, the meat soaks up the lemon and garlic and stays tender on the grill.
  • Dont overcrowd the skewers or the chicken wont cook evenly, leave a little space between each cube.
  • Warm the pita just before serving so it stays soft and pliable, cold pita cracks when you try to fold it.
03 -
  • Soak wooden skewers in water for 30 minutes before grilling so they dont catch fire and turn to ash.
  • Let the chicken rest for a few minutes after grilling so the juices redistribute and every bite stays moist.
  • Taste the tzatziki before you serve it and adjust the salt, lemon, or garlic to your liking, it should be bold and tangy.
  • If you have leftover marinade, dont reuse it on cooked chicken, but you can boil it for a few minutes and drizzle it over the wraps for extra flavor.
