  • Liquids: 1.2 liters (5 cups) chicken or vegetable broth 1 tbsp olive oil
  • Spices & Seasonings: 1 bay leaf 1 tsp dried thyme 1/2 tsp smoked paprika Salt and freshly ground black pepper to taste

Instructions

Step 1:
Heat the olive oil in a large pot over medium heat Add the sliced sausage and cook until browned about 4 minutes Remove sausage with a slotted spoon and set aside
Step 2:
In the same pot add onion carrots celery and potato Sauté for 5 7 minutes until the vegetables begin to soften
Step 3:
Stir in the garlic and cook for 1 minute until fragrant
Step 4:
Add the lentils diced tomatoes (with juice) broth bay leaf thyme and smoked paprika Stir well
Step 5:
Bring to a boil then reduce heat to low Cover and simmer for 25 minutes
Step 6:
Return the browned sausage to the pot Simmer uncovered for another 15 minutes or until lentils and vegetables are tender and the stew has thickened Season with salt and pepper to taste
