04 - Add baby spinach and cook just until wilted, approximately 1-2 minutes.

# Expert Tips:

01 -
  • Everything cooks in one skillet, so cleanup is just a quick wipe and youre done.
  • The salty olives and creamy feta turn simple ground chicken into something that tastes like you spent all afternoon cooking.
  • Its flexible enough to handle whatever greens or herbs are wilting in your crisper drawer.
02 -
  • Dont overcook the chicken or it turns dry and grainy, pull it off the heat as soon as its no longer pink.
  • Add the lemon juice after you turn off the heat, not during cooking, or it can make the chicken taste metallic.
  • Taste before adding salt because the olives and feta are already salty enough to season the whole dish.
03 -
  • Use a large skillet so everything cooks evenly without crowding, which keeps the chicken from steaming instead of browning.
  • Crumble the feta with your hands instead of a knife so you get irregular chunks that melt differently and add texture.
  • If the skillet looks dry after the chicken browns, add a splash of chicken broth or white wine before adding the tomatoes for extra richness.
