# Directions:

01 - Juice the lemons using a citrus juicer until you have 1/2 cup of fresh lemon juice; strain if you prefer a clear beverage.
02 - Place 1 cup raspberries in a large pitcher, add 4 tablespoons agave or simple syrup and the lemon juice, then muddle with a muddler or the back of a wooden spoon until the raspberries are well crushed and the mixture is vibrant.
03 - Pour 3 cups chilled sparkling water into the pitcher and stir gently with a spoon to combine without losing effervescence.
04 - Fill serving glasses with ice, divide the raspberry–lemon mixture evenly among the glasses, and top with any remaining sparkling water if needed.
05 - Garnish each glass with extra raspberries, a lemon slice, and a sprig of fresh mint; serve immediately.

# Expert Tips:

01 -
  • It feels celebratory while staying light and nonalcoholic so everyone can enjoy a glass.
  • It comes together in ten minutes and adapts easily to sweeter or tarter tastes.
02 -
  • Muddle gently enough to crush the berries but not so hard that you force too many seeds into the drink.
  • Always add sparkling water at the end and stir softly to keep the carbonation from flattening.
03 -
  • If fresh raspberries are not available use frozen ones and let them thaw slightly to release juice without watering the drink.
  • Prepare the raspberry lemon base ahead and add sparkling water just before serving to keep every glass fizzy.
