Triple Cheese Sourdough Grilled Cheese (Printable)

Layers of cheddar, provolone, and mozzarella melted between golden, crispy sourdough bread. Ultimate comfort food, ready in 20 minutes.

# What You’ll Need:

→ Bread & Cheese

01 - 4 slices thick sourdough bread
02 - 2 slices sharp cheddar cheese
03 - 2 slices provolone cheese
04 - 1/2 cup shredded mozzarella cheese

→ Spreads & Fats

05 - 2 tablespoons unsalted butter, softened
06 - 1 tablespoon mayonnaise, optional for extra crispiness

# Directions:

01 - Lay out the sourdough slices. Spread butter evenly on one side of each slice. If using, spread a thin layer of mayonnaise on the other side for extra crispiness.
02 - Place two slices, buttered side down, on a clean surface. Layer each with 1 slice cheddar, 1 slice provolone, and half the shredded mozzarella. Top with the remaining bread slices, buttered side up.
03 - Heat a large skillet or griddle over medium-low heat.
04 - Place the sandwiches in the pan and cook for 3 to 5 minutes per side, pressing gently, until the bread is golden brown and the cheese is fully melted. Flip carefully to avoid spillage.
05 - Transfer to a cutting board, let rest for 1 minute, then cut and serve hot.

# Expert Tips:

01 -
  • Three cheeses means you get sharpness, creaminess, and stretch all in one bite without any single flavor overpowering the others.
  • The sourdough crisps up beautifully with butter and holds everything together even when the cheese gets molten and drippy.
  • It comes together in twenty minutes with ingredients you probably already have, so there's no hunting down specialty items.
  • It's the kind of thing that feels indulgent but doesn't ask much of you on a busy weeknight.
02 -
  • Keep the heat at medium-low or the bread will brown too fast and the cheese won't have time to melt all the way through.
  • Softening the butter first makes spreading it so much easier and prevents tearing the bread, which I learned after ruining two slices.
  • Let the sandwich rest for a full minute after cooking or the cheese will slide out the sides the second you cut into it.
03 -
  • Press down gently with your spatula while cooking to help the cheese melt evenly and bond the layers together.
  • If your bread is thin or soft, toast it lightly before assembling so it holds up better under all that cheese.
  • Use a lid for the first few minutes of cooking to trap heat and speed up the melting without cranking up the burner.
