This classic meatloaf recipe has been a staple in our family for years bringing everyone to the table with its rich flavors and comforting sides.

Ingredients

  • Ground Beef: 1 ½ lbs (680 g) ground beef (80/20 blend recommended)
  • Ground Pork: ½ lb (225 g) ground pork
  • Breadcrumbs: 1 cup (100 g)
  • Onion: 1 medium onion finely chopped
  • Garlic: 2 cloves minced
  • Eggs: 2 large
  • Whole Milk: ½ cup (120 ml)
  • Ketchup: ⅓ cup (80 ml)
  • Worcestershire Sauce: 2 tbsp
  • Salt: 1 ½ tsp
  • Black Pepper: 1 tsp
  • Dried Thyme: 1 tsp
  • Brown Sugar: 2 tbsp
  • Dijon Mustard: 1 tbsp
  • Russet Potatoes: 2 lbs (900 g) peeled and cubed
  • Unsalted Butter: 4 tbsp (60 g)
  • Salt and White Pepper: to taste

Instructions

Preheat Oven:
Preheat oven to 350°F (175°C). Line a loaf pan with parchment or lightly grease it.
Mix Meat Mixture:
In a large bowl combine ground beef ground pork breadcrumbs onion garlic eggs milk ketchup Worcestershire sauce salt pepper and thyme. Mix gently until just combined do not overmix.
Shape Loaf:
Transfer the meat mixture to the prepared loaf pan and shape into a loaf.
Prepare Glaze:
In a small bowl mix ketchup brown sugar and Dijon mustard for the glaze. Spread half of the glaze evenly over the meatloaf.
Bake Meatloaf:
Bake the meatloaf for 40 minutes. Remove from oven spread the remaining glaze on top and return to oven for another 20 to 25 minutes or until the center reaches 160°F (71°C).
Cook Potatoes:
While the meatloaf bakes prepare the mashed potatoes Place cubed potatoes in a large pot cover with cold salted water and bring to a boil. Simmer for 15 to 18 minutes or until potatoes are very tender.
Mash Potatoes:
Drain potatoes thoroughly and return to the pot. Add butter and milk. Mash until smooth and creamy adding more milk as needed. Season with salt and white pepper to taste.
Rest and Serve:
Let the meatloaf rest 10 minutes before slicing. Serve with mashed potatoes.
