01 - 1.5 lbs ground beef (80/20 blend)
02 - 0.5 lbs ground pork
03 - 1 cup breadcrumbs
04 - 1 medium onion, finely chopped
05 - 2 cloves garlic, minced
06 - 2 large eggs
07 - 0.5 cup whole milk
08 - 1/3 cup ketchup
09 - 2 tablespoons Worcestershire sauce
10 - 1.5 teaspoons salt
11 - 1 teaspoon black pepper
12 - 1 teaspoon dried thyme
→ Glaze
13 - 1/3 cup ketchup
14 - 2 tablespoons brown sugar
15 - 1 tablespoon Dijon mustard
→ Mashed Potatoes
16 - 2 lbs russet potatoes, peeled and cubed
17 - 4 tablespoons unsalted butter
18 - 0.5 cup whole milk (plus more if needed)
19 - Salt and white pepper, to taste
# Directions:
01 - Set oven temperature to 350°F and prepare a loaf pan by lining with parchment or lightly greasing.
02 - In a large bowl, gently mix ground beef, ground pork, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and thyme until just combined to avoid overmixing.
03 - Transfer the mixture into the prepared pan and mold into an even loaf shape.
04 - Mix ketchup, brown sugar, and Dijon mustard in a small bowl. Spread half of the glaze evenly over the meatloaf surface.
05 - Bake for 40 minutes. Remove from oven, spread remaining glaze on top, then return to bake for an additional 20 to 25 minutes until the internal temperature reaches 160°F.
06 - Place cubed potatoes in a large pot, cover with cold salted water, and bring to a boil. Simmer until tender, about 15 to 18 minutes.
07 - Drain potatoes thoroughly and return them to the pot. Add butter and milk, mashing until smooth and creamy, adding additional milk as needed. Season with salt and white pepper to taste.
08 - Allow meatloaf to rest for 10 minutes before slicing. Serve alongside the mashed potatoes.
