01 - 1 large ripe pineapple
02 - 1 ripe mango, peeled and diced
03 - 1 cup seedless watermelon, diced
04 - 1 kiwi, peeled and sliced
05 - 1/2 cup strawberries, hulled and sliced
06 - 1/2 cup blueberries
→ Dressing
07 - Juice of 1 lime
08 - 1 tablespoon honey or agave syrup (optional)
→ Garnish
09 - 2 tablespoons shredded coconut (unsweetened or sweetened, as preferred)
10 - Fresh mint leaves
# Directions:
01 - Cut the pineapple in half lengthwise, leaving the leaves attached for presentation.
02 - Carefully cut around the edge of each pineapple half and scoop out the flesh, leaving approximately 1/2 inch of shell to form boats. Dice the pineapple flesh, removing the tough core.
03 - In a large bowl, mix the diced pineapple, mango, watermelon, kiwi, strawberries, and blueberries until evenly distributed.
04 - Whisk together the lime juice and honey or agave syrup in a small bowl. Drizzle over the mixed fruit and gently toss to coat.
05 - Spoon the dressed fruit mixture evenly into the prepared pineapple shells.
06 - Sprinkle shredded coconut over the fruit boats and garnish with fresh mint leaves.
